Mr. Grumble's Easy Chicken Tacos

Mr. Grumble loves to cook. It is his way to relax and unwind. When he gets in his kitchen, he gets to work on creating all kinds of delectable meals. He is always mindful of the foods we eat and keeping them within our calorie budget. Sometimes, his simple creations are my favorite. This is one of his signature, go to meals. I hope you will enjoy it as much as we do.


Mr. Grumble's Easy Chicken Tacos


Ingredients:

.75 lbs per person, boneless chicken breast (1 1/2 lbs. for Jamie and I. Ingredients may vary on how many people you are cooking for).

1/2 green bell pepper

1/2 red onion

2 TB of olive oil

pinch of salt and pepper

dash of garlic and chili powders

1 lemon (optional)

1 packet of McCormick's fajita mix

1 can of black beans

1 can of Rotel tomatoes

1 package of spinach or low calorie tortillas


Cooking Instructions:


First, cut breasts into bite size pieces, not strips. Salt and pepper them. Then, dice the onions and bell peppers. "Sweat" the onion and bell pepper in olive oil in a large pan or skillet. Remove the onions and bell peppers. Add the chicken to the pan. Stir constantly. Cook until chicken is done (about 5 minutes). Add the seasoning packet plus a pinch of salt, a little pepper, a dash or two of garlic powder and chili powder. If you want, add the juice from one squeezed lemon. Stir until coated well and browned. Add about 2 to 3 TB of water and simmer. Put the onions and bell peppers back into the pan. Simmer for 5 more minutes.


Heat the tortillas in a cast iron skillet individually.


Serve with black beans, Rotel tomatoes, fresh cilantro, cubed avocado, diced onions, and no salt tortilla chips. We skip the cheese because it is high calorie. (We love cheese, but reserve it for splurge meals).


Complete the meal with your favorite beverages. For us, it is iced tea and Topo Chico. Enjoy!


My meal consisted of two tacos and was 690 calories. We try to eat our bigger meals at lunch when we can. Breakfast and dinner were light and my total calories for the day was 1282. This is what I call a successful meal day!

Cook the black beans and Rotel tomatoes together until they heat up





















Warm the tortillas in a cast iron skillet. It makes them crispy, brown, and adds a nice flavor to your tacos.





















Onions and avocados for more great flavor.





















Put it all together for a simple and delicious meal!
